My husband LOVES veal but only if it's tender. I've combined various recipes I've come across for this one. If you can pick up a breast of veal, you can cut it into larger sized pieces for a more substantial meal. You can easily increase the batch by adding more tomatoes. Serve over spaghetti, your favorite pasta or rice. I always make a large batch so that there's extra for the freezer.

Ingredients

  • 2 1/2 pounds veal breast or stew meat, cut into chunks
  • 1 cup flour
  • 6 cloves garlic, minced or to taste
  • 1 - onion, diced
  • 2 cans diced tomatoes, 28 oz
  • 1 tablespoon tomato paste
  • 3/4 cup white wine
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 - bay leaves
  • 1 teaspoon red pepper flakes or to taste, optional

How To Make pressure cooker veal sauce

  • Step 1
    Cut veal into chunks and dredge in flour.
  • Step 2
    Heat oil in pressure cooker. Brown veal and set aside.
  • Step 3
    In same oil, sauté onions and garlic until lightly browned but not burned.
  • Step 4
    Return veal to the pot and add the rest of the rest of the ingredients.
  • Step 5
    Seal cooker and bring to full pressure. Cook for 15 minutes. Remove from heat and allow pressure to return to normal naturally.
  • Step 6
    Remove bay leaves before serving.
