These little meatballs are the start of a delicous meatball sandwich. The combination of the meat and the sauce over a hoagie bun with some cheese and lettuce is fantastic. Leftover, these meatballs were awesome over rice.

Ingredients

  • 1 pound ground beef
  • 1/2 cup long grain rice, cooked
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon parsley flakes
  • 1 tablespoon worcestershire sauce
  • 1 large egg
  • salt and pepper
  • 1 can tomato soup
  • 1 cup v8 juice
  • 8 ounces tomato sauce
  • 1/2 teaspoon italian seasoning

How To Make porcupine meatballs in sauce

  • Step 1
    Combine beef, rice, garlic powder, parsley, worcestershire sauce, egg, and salt and pepper. in a large bowl.
  • Step 2
    Shape meat mixture into balls, this recipe should make about 20 small meat balls. Place rounded meat balls onto a greased baking dish.
  • Step 3
    Combine tomato soup, V8 juice, tomato sauce, Italian seasoning, and a little more salt and pepper then pour over the meatballs in the baking dish.
  • Step 4
    Bake 1 hour in 350 Oven. Can be served over rice, potatoes, or as a sandwich.
