porcupine meatballs

I know there are different versions of this out there, but this is my version n' my families favorite :)

yield 12-14 meatballs

Ingredients

  • 2 1/2 pounds 80% lean beef hamburger
  • 1/2 cup uncooked instant white rice
  • 1/4 - 1/2 cup finely diced onions
  • 1/4 - 1/2 cup finely diced bell pepper
  • 1 - egg
  • 1/8 cup italian bread crumbs
  • 2- 15oz cans tomato sauce
  • 1/2 cup ketchup
  • dash salt (to taste)
  • dash onion powder

How To Make porcupine meatballs

  • Step 1
    mix everything together except tomato sauce, ketchup, n'onion powder
  • Step 2
    form med. size balls (12 -14)
  • Step 3
    mix tomato sauce, ketchup, n' onion powder together
  • Step 4
    pour half of sauce in a 9x13 pan
  • Step 5
    place your meatballs in pan
  • Step 6
    pour rest of sauce over meatballs
  • Step 7
    lightly sprinkle onion powder over the top
  • Step 8
    cover, n' bake @ 350 for appx. 1 hour
