philly cheesesteak casserole
This was very good, although the kids didn't like the red pepper. Served this with fruit salad & green beans.

Ingredients
- 3 cups uncooked egg noodles
- 2 pounds boneless sirloin steak, 3/4" thick
- 1 cup chopped onion
- 1/2 cup green pepper (i used red)
- 1 3/4 cups beef broth
- 1/4 cup all purpose flour
- 1/2 cup fat free half & half
- 1 tablespoon dijon mustard
- 1 cup reduced fat cheddar cheese
How To Make philly cheesesteak casserole

Step 1Heat oven to 350*. Spray 11 x 9" glass baking dish with Pam. Cook and drain noodles as directed.

Step 2Remove fat from beef. Cut into 3/4" pieces. Heat skillet over medium heat. Cook beef and salt & pepper in skillet 2-3 minutes, stirring occasionally, until beef is brown. Stir in onions & bell pepper. Cook 2 minutes, stirring occasionally. Pour into baking dish.

Step 3In bowl, beat broth and flour with wire whisk until smooth. Add to skillet, heat to boiling. Cook stirring constantly until mixture thickens; remove from heat. Stir in half & half and mustard. Spoon over beef mixture. Stir in cooked noodles.

Step 4Cover and bake 40 minutes. Sprinkle with cheese and bake uncovered about 10 minutes longer or until cheese is melted.
