I adapted this from a similar recipe I found. It's always a huge hit in my family, especially during the cold winter season. It's easy to prepare and enjoyable to experiment with. Although it might seem strange to include Pepsi in a pot roast, you'll find that the meat is wonderfully tender. You won't taste the Pepsi at all. I serve this with noodles that I've tossed with butter and dried parsley leaves.

Ingredients
- 1 - 3-5 pound boneless beef roast, trimmed
- 1 can pepsi
- 1 can cream of mushroom soup, undiluted
- 1 - pouch dry onion soup mix
- 1 clove garlic, minced (optional)
- 3 or 4 - medium carrots, cut into chunks
- 3 or 4 - small potatoes, peeled and cut into chunks
- - salt and pepper to taste
How To Make pepsi pot roast

Step 1Preheat oven to 350 degrees F. Line a 3-quart casserole dish with foil. Use pieces which are long enough to cover the food.

Step 2Place roast in the middle. Pour Pepsi over the top. Spoon cream of mushroom soup over this. Sprinkle with onion soup mix and garlic clove.

Step 3Surround the roast evenly with the vegetables. Sprinkle salt and pepper over all. Cover tightly with foil. Bake in preheated oven for three (3) hours.
