Pepsi Pot Roast
I serve this with noodles that I've tossed with butter and dried parsley leaves.
13-5 pound boneless beef roast, trimmed
1 can(s)cream of mushroom soup, undiluted
1pouch dry onion soup mix
1 clovegarlic, minced (optional)
3 or 4medium carrots, cut into chunks
3 or 4small potatoes, peeled and cut into chunks
·salt and pepper to taste
How to Make Pepsi Pot Roast
- Preheat oven to 350 degrees F.
Line a 3-quart casserole dish with foil. Use pieces which are long enough to cover the food.
- Place roast in the middle. Pour Pepsi over the top.
Spoon cream of mushroom soup over this. Sprinkle with onion soup mix and garlic clove.
- Surround the roast evenly with the vegetables. Sprinkle salt and pepper over all.
Cover tightly with foil.
Bake in preheated oven for three (3) hours.
