beef sirloin, boneless cut into strips
1 Tbsp
vegetable oil
red bell pepper, julienned
yellow bell pepper, thinly sliced
green bell pepper, julienned
salt and pepper to taste
1/2 c
green onion, chopped
2 Tbsp
dijon mustard
2 Tbsp

How to Make Pepper Rice and Confetti Beef


  • 1In a medium saucepan bring chicken broth to a boil.
  • 2Add rice and stir.
  • 3Reduce heat, cover and simmer for 20 minutes.
  • 4Heat oil in a large skillet over medium heat, and cook the beef, red bell pepper, yellow bell pepper and green bell pepper until beef is evenly browned.
  • 5Season with salt and pepper.
  • 6Remove from heat.
  • 7Stir dijon mustard and honey in the beef mixture.
  • 8Stir green onions into cooked rice.
  • 9Serve peppers and beef over the rice.
