Ingredients

  • 1.5 cups chicken broth
  • 1.5 cups rice
  • 1/2 pound beef sirloin, boneless cut into strips
  • 1 tablespoon vegetable oil
  • 1/2 - red bell pepper, julienned
  • 1/2 - yellow bell pepper, thinly sliced
  • 1/2 - green bell pepper, julienned
  • - salt and pepper to taste
  • 1/2 cup green onion, chopped
  • 2 tablespoons dijon mustard
  • 2 tablespoons honey

How To Make pepper rice and confetti beef

  • Step 1
    In a medium saucepan bring chicken broth to a boil.
  • Step 2
    Add rice and stir.
  • Step 3
    Reduce heat, cover and simmer for 20 minutes.
  • Step 4
    Heat oil in a large skillet over medium heat, and cook the beef, red bell pepper, yellow bell pepper and green bell pepper until beef is evenly browned.
  • Step 5
    Season with salt and pepper.
  • Step 6
    Remove from heat.
  • Step 7
    Stir dijon mustard and honey in the beef mixture.
  • Step 8
    Stir green onions into cooked rice.
  • Step 9
    Serve peppers and beef over the rice.
