Paul's Chuck Wagon Bean Bake
It's very important to use a glass or ceramic baking dish for tomato-based recipes. Don't substitute an aluminum pan--aluminum reacts with tomatoes and will give the food a bitter aftertaste.

1 lblean or extra-lean ground beef
1/2 cchopped onion
1/2 cchopped green pepper
1 can(s)(15 oz) baked beans, undrained
1 can(s)(15 oz) dark kidney beans, drained, rinsed
1 can(s)(15 oz) black beans, drained, rinsed
1 can(s)(8 oz) tomato sauce
1/3 cbarbecue sauce
How to Make Paul's Chuck Wagon Bean Bake
- Preheat oven to 375. Combine ground beef, onion and bell pepper in a large skillet. Cook over med. high heat, stirring frequently, until beef is browned and crumbly, about 8 mins.; drain.
- Combine cooked beef mixture, baked beans, kidney beans, black beans, tomato sauce, barbeque sauce and salt in a 3-quart casserole dish.
- Cover dish. Bake 30 mins. Uncover dish; bake until mixture is bubbly and slightly thickened. 15-20 mins. longer.
