Ingredients For pan broiled steak with whiskey sauce

1 lgbeef steak, 2" thick

1 Tbspworcestershire sauce

2 Tbspwhiskey

1garlic clove, minced

2 Tbsponion, chopped

1/4 lbbutter
- SAUCE INGREDIENTS

1/2 tspsalt, coarse

3garlic cloves, minced
-
1 Tbspblack peppercorns, freshly cracked

1 dashpepper sauce
How To Make pan broiled steak with whiskey sauce

1Pour off any fat from cooking the steak.

2Melt butter in the same skillet over low heat.

3Add onion and garlic and cook slowly until soft.

4Add remaining ingredients and simmer for a minute or two.

5Pour over steaks.

6Trim excess fat from outside the steak.

7Press crushed peppercorns and garlic into both sides of the meat and let stand at room temperature for 1 hour.

8Heat a cast-iron skillet over high heat.

9Grease the bottom of the hot skillet with a piece of fat trimmed off the steak.

10Toss in about half of the salt.

11Sear the steak or steaks quickly on one side, then lift out, add the remaining salt to the skillet, turn the steak, and sear the other side.

12Reduce the heat to medium and cook the steaks as desired.

13Remove to a warm platter.

14Pour sauce over steaks and serve.
