Ingredients
- 1 large beef steak, 2" thick
- 1 tablespoon black peppercorns, freshly cracked
- 3 - garlic cloves, minced
- 1/2 teaspoon salt, coarse
- SAUCE INGREDIENTS
- 1/4 pound butter
- 2 tablespoons onion, chopped
- 1 - garlic clove, minced
- 2 tablespoons whiskey
- 1 tablespoon worcestershire sauce
- 1 dash pepper sauce
How To Make pan broiled steak with whiskey sauce

Step 1Pour off any fat from cooking the steak.

Step 2Melt butter in the same skillet over low heat.

Step 3Add onion and garlic and cook slowly until soft.

Step 4Add remaining ingredients and simmer for a minute or two.

Step 5Pour over steaks.

Step 6Trim excess fat from outside the steak.

Step 7Press crushed peppercorns and garlic into both sides of the meat and let stand at room temperature for 1 hour.

Step 8Heat a cast-iron skillet over high heat.

Step 9Grease the bottom of the hot skillet with a piece of fat trimmed off the steak.

Step 10Toss in about half of the salt.

Step 11Sear the steak or steaks quickly on one side, then lift out, add the remaining salt to the skillet, turn the steak, and sear the other side.

Step 12Reduce the heat to medium and cook the steaks as desired.

Step 13Remove to a warm platter.

Step 14Pour sauce over steaks and serve.
