chuck roast, cut in 2" thick pieces
1/4 tsp
2 tsp
beef bouillon cube
1 c
boiling water
1/2 tsp
1/2 tsp
ground savory
1/4 tsp
2 oz
mushrooms, drained

How to Make Oven-Roasted Beef Au Jus


  • 1Rub surface of roast with salt and pepper.
  • 2Place the roast on a rack in a shallow open pan.
  • 3Insert roast meat thermometer into the center of the thickest portion.
  • 4Roast in 325 oven about 2 - 2 1/2 hours or until the meat thermometer reaches 160 for a medium done roast.
  • 5Remove roast to warm platter.
  • 6Serve with hot seasoned juices from pan.
  • 7AU JUS: Add a small amount hot water and stir the brown bits from pan and rack into the drippings.
  • 8Measure drippings.
  • 9Add dissolved bouillon to bring drippings to 2 cups.
  • 10Pour into roasting pan. Blend in herbs and mushrooms.
  • 11Simmer 5 minutes.
