Ingredients

  • 3 pounds chuck roast, cut in 2" thick pieces
  • 1/4 teaspoon pepper
  • 2 teaspoons salt
  • 1 - beef bouillon cube
  • 1 cup boiling water
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon ground savory
  • 1/4 teaspoon sage
  • 2 ounces mushrooms, drained

How To Make oven-roasted beef au jus

  • Step 1
    Rub surface of roast with salt and pepper.
  • Step 2
    Place the roast on a rack in a shallow open pan.
  • Step 3
    Insert roast meat thermometer into the center of the thickest portion.
  • Step 4
    Roast in 325 oven about 2 - 2 1/2 hours or until the meat thermometer reaches 160 for a medium done roast.
  • Step 5
    Remove roast to warm platter.
  • Step 6
    Serve with hot seasoned juices from pan.
  • Step 7
    AU JUS: Add a small amount hot water and stir the brown bits from pan and rack into the drippings.
  • Step 8
    Measure drippings.
  • Step 9
    Add dissolved bouillon to bring drippings to 2 cups.
  • Step 10
    Pour into roasting pan. Blend in herbs and mushrooms.
  • Step 11
    Simmer 5 minutes.
