This recipe was given to me by my mother-in-law and it is always a hit! It, also, can be done in a crock pot.

Ingredients

  • 2 pounds beef, cut into cubes
  • 1 medium onion, cut in eighths
  • 3 - stalks, sliced diagonally
  • 4 medium carrots, pared, cut in halves, lengthwise & crosswise
  • 1 cup tomato juice
  • 1/3 cup quick-cooking tapioca
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 medium potatoes-sliced 1/4" thick

How To Make oven beef stew

  • Step 1
    Combine beef, onion, celery, carrots, tomato juice, tapioca, sugar, salt and pepper in a 2 1/2 qt. casserole.
  • Step 2
    Cover & bake at 325 degree oven for 3 1/2 hrs. or until meat is fork tender.
  • Step 3
    Stir stew several times during cooking. If stew seems thick, stir in a little water.
  • Step 4
    Mix potatoes into stew during last hour of cooking time!!!!
