This recipe was given to me by my mother-in-law and it is always a hit! It, also, can be done in a crock pot.

Ingredients
- 2 pounds beef, cut into cubes
- 1 medium onion, cut in eighths
- 3 - stalks, sliced diagonally
- 4 medium carrots, pared, cut in halves, lengthwise & crosswise
- 1 cup tomato juice
- 1/3 cup quick-cooking tapioca
- 1 tablespoon sugar
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 medium potatoes-sliced 1/4" thick
How To Make oven beef stew

Step 1Combine beef, onion, celery, carrots, tomato juice, tapioca, sugar, salt and pepper in a 2 1/2 qt. casserole.

Step 2Cover & bake at 325 degree oven for 3 1/2 hrs. or until meat is fork tender.

Step 3Stir stew several times during cooking. If stew seems thick, stir in a little water.

Step 4Mix potatoes into stew during last hour of cooking time!!!!
