Mom threw lots of parties, I fondly remember her Chinese party where she let me help decorate with paper lanterns. This was one of the main courses she served as an option for her guests. Since she also had several types of rice available, she didn't mention it in the ingredients. So serve over rice of your choice. :)

Ingredients
- 1 7/8 pounds round steak
- 3 cups low calorie ginger ale
- 1/2 teaspoon salt
- 4 ounces sliced fresh mushrooms
- 3 tablespoons cornstarch
- 3 tablespoons soy sauce
- 2 1/2 teaspoons vinegar
- 1 medium green pepper, stripped
- 1/2 cup sliced green onions
- 2 medium tomatoes, wedged

Step 1Trim excess fat from steak, cut into strips 2" x 1 1/2". Place in ginger ale and salt and marinate 1 hour in fridge. Simmer 30 min until beef is tender. Add mushrooms and cook 5 min. Combine cornstarch, soy sauce and vinegar. Add to meat mixture. Cook over med heat until thickened, stirring constantly. Fold in green pepper, onions and tomatoes and heat only until hot. Serve immediately.
