Ingredients

  • 3 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 1 large egg, slightly beaten
  • 1 pound ground beef
  • 1/4 cup water
  • 1/2 cup bread crumbs
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons garlic salt
  • 4 - potatoes, scrubbed and sliced
  • 20 ounces carrots, frozen crinkle cut

How To Make one pot dinner recipe

  • Step 1
    Heat the oil in a skillet on medium-high heat. Reduce the heat to medium once oil is hot. Place the onion on the bottom of the pan.
  • Step 2
    In a large bowl, mix the egg, beef, water, bread crumbs, onion powder and garlic salt. Press meat into the bottom of the bowl to form a rounded loaf. Invert the bowl to remove and place the loaf on top of the onion.
  • Step 3
    Place the sliced potatoes around the loaf and the carrots atop the potatoes. Sprinkle the entire thing with additional seasonings if desired.
  • Step 4
    Cover and cook for about 1 hour. After 30 minutes turn the meatloaf over and stir the vegetables. Additional water may be added also.
