Ingredients

  • 2 lb
    ground beef (I prefer 80/20) can use chuck, round, sirloin
  • 1/2 lb
    chorizo (Mexican sausage, mild or medium
  • 1/2 c
    minced onion
  • 4 slice
    colby jack cheese (or shredded)
  • ·
    sliced tomato
  • ·
    lettuce leaves
  • 8 slice
    bacon, fried
  • ·
    chipotle mayo
  • ·
    salt and pepper to taste

How to Make One Killer Burger

Step-by-Step

  1. Combine beef, chorizo, salt & pepper, and onion and mix together in a bowl.
  2. Divide mixture into four large patties or 8 smaller patties.
  3. Grill to your liking. I cook mine to a internal temp of 155 degrees. Top with cheese right before transferring to a platter.
  4. Dress buns with chipotle mayo. Place pattie, then bacon, and top with tomato and lettuce.
