This has many different names: Creamed Chipped Beef On Toast S.O.S. ($h!t On A Shingle) And my way...I made a few delish changes. Added a piece of cheese & a gooey fried egg on top! Before you eat it, break that yolk so it goes all over, hence the Bird Doo On A Shingle - LOL!

Ingredients

  • 1/2 stick butter, unsalted
  • 1 large onion, finely chopped
  • 4 - 6 tablespoons all purpose flour
  • 1 teaspoon dry mustard powder
  • 1 teaspoon thyme, dried
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper, to taste
  • 1 1/2 cups half & half
  • 1 1/2 cups milk
  • 1 cup water
  • 2 cups corned beef, cooked, chopped or dried beef, chopped or salami, chopped
  • 1 pinch nutmeg
  • 6 slices hearty white sandwich bread, toasted
  • 6 slices cheese, of choice
  • 3 tablespoons chives, dried, chopped
  • OPTIONAL - BUT OH SO WORTH IT:
  • 6 - sunny side up fried eggs

How To Make bird doo on a shingle

  • Step 1
    Melt butter in saucepan over medium heat. Add onion & cook until softened, about 1 minute. Stir in 4 tbsp flour, mustard, thyme, cayenne & pepper & cook until fragrant, about 1 minute. Slowly whisk in 1/2 & 1/2, milk, water. Bring to simmer & cook over low heat, stirring occasionally, until thickened, 6 - 8 minutes. NOTE: If not getting thick enough, add more flour 1 tbsp at a time until desired consistantcy.
  • Step 2
    Stir beef & nutmeg into sauce & cook until beef is heated through, about 2 minutes.
  • Step 3
    If desired, fry egg until yolk is still gooey - VERY IMPORTANT!
  • Step 4
    Toast the bread, place cheese slice on top & spoon mixture over, sprinkle with chives & place egg over top. Serve & enjoy!
