oh calcutta burger
You can grill these outside or inside on a grill pan I have given both directiions. Sweet, smokey, earthy are just a few words that come to mind best flavor ever! I like to serve with a side of sweet potato fries dusted with 1 teaspoon turmeric.

Ingredients
- TOMATO, MINT AND RED ONION SALAD
- 1 cup cherry tomatoes thinly sliced
- 1 small cucumber thinly sliced
- 1 medium red onion thinly sliced
- 1/2 cup fresh mint finely chopped
- 1 tablespoon olive oil, extra virgin
- 2 tablespoons resling wine (good wine)
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- SAFFRON GARLIC MAYO
- 1/2 cup black peppered olive oil mayonaise
- 2 cloves garlic minced
- 1 teaspoon turmeric, ground
- 12 - threads saffron
- PATTIES
- 1 pound beef brisket twice ground
- 1 pound ground chuck
- 1 tablespoon garam masala (i use khazana brand)
- 3 tablespoons calcutta heat curry seasoning (i use spice island brand)
- 1/2 cup cilantro finely chopped
- 8 ounces paneer cheese medium crumble
- 5 ounces tamarind date chutney (i use khazana brand)
- BREAD
- 6-8 - pieces of naan bread grilled
- 1/4 cup vegetable oil brush bread and grill befroe grilling

Step 1To prepare salad add tomato slices, onion slices,cucumber slices and mint to medium bowl sprinkle with salt and pepper, Riesling and olive oil toss and cover, place in refrigerator until ready to assemble burgers.

Step 2To prepare place mayonnaise in small bowl add smashed saffron threads, and turmeric and mix well. Cover with plastic wrap and refrigerate until ready to build burgers.

Step 3To build patties gently with your hands mix meat in large bowl with spices, herbs, and cheese crumbles. Form into 6 oval shape patties brush each patty on both sides with tamarind date chutney place on platter and refrigerate for 15 minutes then remove from refrigerator let burgers set out for 6-8 minutes before you place on grill.

Step 4Stove top grill pan method: Place gril pan on medium hight heat brusah with olive oil and place patties on grill pan. Cook for 4-5 minutes on easch side them remove from pan and rest for 6-8 minutes. Heat the grill to medium-high or use charcoal grill with a medium hot fire all coals should be hot. When the grill is ready, with a paper or cloth towel, rub the grill rack with vegetable oil to prevent sticking.

Step 5Brush patties with Tamarind Date Chutney place the patties on the rack and cook until done to preference, 4 to 6 minutes on each side. Turn patties only one time and baste again with Tamarind Date chutney. Do not push down on the patty because this will release the juices

Step 6Remove the patties from the grill and place on platter to rest. Place Naan bread on grill for about 1 minute on each side to warm

Step 7Remove and begin to build you Oh Calcutta burgers. Place Naan bread on plate place 1 tablespoon of Saffron garlic mayo on entire piece of bread. Top with burger then add 2-3 tablespoons of Tomato, mint, and red onion salad, fold Naan over spear with sandwich pick and serve. Makes six burgers
