Who doesn't love meatballs? I do & so does my family. I make them big sometimes for a meal just be themself. So yummy...

Ingredients

  • 1 c
    diced tomatoes, undrained
  • 1 c
    water
  • 1/4 c
    zesty italian dressing
  • 1
    chipotle pepper, in adobo sauce
  • 1 pkg
    stove top stuffing mix for chicken
  • 2
    eggs
  • 1/2 c
    water
  • 2 lb
    lean ground beef
  • 1/4 c
    cilantro, fresh & chopped
  • 4 c
    rice, cooked and hot

How to Make Now That's A Spicy Meatball

Step-by-Step

  1. Blend the first 4 ingredients in a blender until smooth. Then pour into large saucepan & bring to a boil.
  2. In the mean time mix the next 5 ingredients in a large bowl. Then shape into 24 balls, about 1/4 cup each. Then drop each meatball gently into the boiling tomato sauce & cover.
  3. Simmer on medium-high heat 20 to 25 mins or until meatballs are done. Then serve with rice.
  4. Special Tip: For a shortcut use a small ice cream scoop to make shaping the balls easy. It also helps keep things clean cause you dont have to handle the meat.
