Who doesn't love meatballs? I do & so does my family. I make them big sometimes for a meal just be themself. So yummy...

Ingredients
- 1 cup diced tomatoes, undrained
- 1 cup water
- 1/4 cup zesty italian dressing
- 1 - chipotle pepper, in adobo sauce
- 1 package stove top stuffing mix for chicken
- 2 - eggs
- 1/2 cup water
- 2 pounds lean ground beef
- 1/4 cup cilantro, fresh & chopped
- 4 cups rice, cooked and hot
How To Make now that's a spicy meatball

Step 1Blend the first 4 ingredients in a blender until smooth. Then pour into large saucepan & bring to a boil.

Step 2In the mean time mix the next 5 ingredients in a large bowl. Then shape into 24 balls, about 1/4 cup each. Then drop each meatball gently into the boiling tomato sauce & cover.

Step 3Simmer on medium-high heat 20 to 25 mins or until meatballs are done. Then serve with rice.

Step 4Special Tip: For a shortcut use a small ice cream scoop to make shaping the balls easy. It also helps keep things clean cause you dont have to handle the meat.
