One of the many ways I like to do chili. Always a family favorite in my house. Plus to if I realy plan ahead I makeit in my crock pot.

Ingredients

  • 2 Tbsp
    vegetable oil
  • 2 medium
    onions, chopped
  • 1 medium
    green bell pepper, chopped
  • 2
    cloves garlic, minced
  • 1 1/2 lb
    lean ground beef
  • 1 can(s)
    whole peeled tomatoes in tomato sauce cut up
  • 1 can(s)
    red kidney beans, drained
  • 1 can(s)
    beef broth
  • 2 Tbsp
    chili powder
  • 2 tsp
    oregano, dried
  • 1 tsp
    salt
  • 1 tsp
    ground cumin
  • 1/2 tsp
    red pepper, crushed
  • 1 can(s)
    tomatoe paste
  • 6 c
    rice, cooked and hot
  • 1 c
    cheddar cheese, shredded
  • 1 c
    sour cream

How to Make Nothing Easier then chili con Carne

Step-by-Step

  1. Heat the oil in a 6 qt. saucepot over medium-high heat.Add in the onions, green peppers & garlic. Cook & stir for about 5 minsor until veggies are tender. Add in the meat cook & stir 5 mins longer.
  2. Add in the tomatoes with the liquid,the beans tomatoe paste & seasonings.Bring to a boil.Reduce the heat to low. Simmer kind of covered for about 1 hour or until the chili has thickened. Stirring occasionally.
  3. Serve hot over the rice. Top with the cheese & sour cream.
