This meatloaf is super yummy and moist. I use a square baking dish so that the meatloaf cooks more evenly and there are more “crusty” parts around the edges and on top. It’s great with mashed potatoes and gravy and a green salad for dinner or during the summer months, I make this early in the morning so I don’t have to heat up my kitchen during the hot of the day; then we have another option for sandwiches other than your basic lunch meats. So Yummy!!!

Ingredients

2 lb
ground beef
1 c
cheez-it crackers (crushed) or garlic ritz for non-dairy
1 pkg
onion soup mix (dry)
2 Tbsp
garlic (minced) i used dried
1 tsp
black pepper
1 Tbsp
no salt seasoning (i use they type you find at big lots or the dollar type stores)
1
egg
1- 8 oz
can tomato sauce any flavor or v-8 juice
1 medium
red onion (diced)
2 Tbsp
jalapeno mustard (i use morehouse brand)

How to Make Nicole's Marvelous Meatloaf

Step-by-Step

  • 1Preheat oven to 375º
  • 2Thoroughly mix ALL ingredients in a bowl.
  • 3Place in an 8” or 9" square baking dish.
  • 4Cook for 60 minutes (or until internal temperature is 165º). I like mine super "crusty" so I leave it in up to 30 minutes more.
  • 5Let meatloaf rest for 15 minutes before serving.
