nicole's marvelous meatloaf

This meatloaf is super yummy and moist. I use a square baking dish so that the meatloaf cooks more evenly and there are more “crusty” parts around the edges and on top. It’s great with mashed potatoes and gravy and a green salad for dinner or during the summer months, I make this early in the morning so I don’t have to heat up my kitchen during the hot of the day; then we have another option for sandwiches other than your basic lunch meats. So Yummy!!!

Ingredients

  • 2 pounds ground beef
  • 1 cup cheez-it crackers (crushed) or garlic ritz for non-dairy
  • 1 package onion soup mix (dry)
  • 2 tablespoons garlic (minced) i used dried
  • 1 teaspoon black pepper
  • 1 tablespoon no salt seasoning (i use they type you find at big lots or the dollar type stores)
  • 1 - egg
  • 1- 8 ounces can tomato sauce any flavor or v-8 juice
  • 1 medium red onion (diced)
  • 2 tablespoons jalapeno mustard (i use morehouse brand)

How To Make nicole's marvelous meatloaf

  • Step 1
    Preheat oven to 375º
  • Step 2
    Thoroughly mix ALL ingredients in a bowl.
  • Step 3
    Place in an 8” or 9" square baking dish.
  • Step 4
    Cook for 60 minutes (or until internal temperature is 165º). I like mine super "crusty" so I leave it in up to 30 minutes more.
  • Step 5
    Let meatloaf rest for 15 minutes before serving.
