My mother-in-law originally gave me this recipe and I have made a couple of changes. This is miles above the ordinary chipped beef on toast.

Ingredients

  • 2 packages chopped, smoked, pressed beef
  • 1/4 cup all purpose flour
  • 2 cups milk or half n half
  • 6 tablespoons butter
  • 1/2 teaspoon salt
  • dash black pepper
  • 1 medium green bell pepper
  • 1 can (15 oz. cream-style sweet corn
  • 4-6 ounces cheddar or american cheese
  • 4-6 slices bread for toast

How To Make new & improved sos

  • Step 1
    Chop the bell pepper into small pieces and saute in a large skillet with 4 Tbsp. butter.
  • Step 2
    Cut the chipped beef into small, bite-size pieces and add to peppers. Cook until hot and the peppers are translucent, stirring to break up pieces of beef.
  • Step 3
    Stir in the flour until a thick paste forms and add remaining 2 Tbsp. of butter. Gradually stir in milk or half n half.
  • Step 4
    When mixture begins to bubble, add the creamed corn and the cheese. Mix well and simmer about 5 minutes over low heat.
  • NEW & IMPROVED SOS
    Step 5
    Season with salt and pepper. Serve hot over toast.
