nc sloppy joes, my way
In NC this summer, I found this recipe in a magazine, and since I love Sloppy Joes of basically all types, kept this. It is, however, adjusted to my tastes. :)

Ingredients
- 2 pounds ground chuck
- 1 medium onion, chopped (use a sweet one) i use 2 large vidallia onions
- 1 medium green pepper, chopped (i prefer orange, yellow or red pepper in this)
- 1 teaspoon garlic powder (i use a spoon of minced garlic from the fridge!)
- 1/2 cup ketchup
- 1/2 cup water
- 1 tablespoon brown sugar
- 3 tablespoons tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons chili powder
- hot sauce to taste (i omit)

Step 1Cook onion, ground beef and pepper, over med-high heat, stirring to break up, until beef is cooked through. Drain well then return to pan.

Step 2Reduce heat to med. Stir in all but hot sauce. Reduce heat and simmer 30 min. Add hot sauce to taste and serve.
