Grandma Gerri made hamburger soup and Nana Devine made meatball soup. Both were amazing and delish and just the perfect thing to eat on those snowy cold days in PA. Here is Nana's recipe for an amazing meatball soup

Ingredients For nana devine's meatball soup

  • MEATBALLS
  • 2 lbs ground beef
  • 1 c cooked white or long grain rice
  • 2 eggs, large
  • 1/2 t cumin
  • 2 1/2 t oregano
  • salt pepper garlic powder and onion powder to taste
  • flour to roll meatballs in prior to adding to soup
  • SOUP
  • 2 quarts of beef broth and 2 quarts of water (i use left over broth from my slowcooker pot roast and then add the water to this to make the total 4 quarts)
  • 2 large onions cut in eight pieces each
  • 1 to 2 bay leaves
  • 6 medium to large potatoes cut into chunks
  • add ins: canned corn, beans, carrots
  • salt pepper garlic powder and onion powder to taste
  • EGG NOODLES, OR YOUR FAVE NOODLE TO ADD TO EACH BOWL : )

How To Make nana devine's meatball soup

    Meatballs: Combine all ingredients together in a large bowl and mix well. Roll into meatballs about 1 inch each.

    In a large pot on the stove combine broth, water, onion and bay leaf and seasonings and bring to a boil.

    Prior to dropping meatballs in broth coat them all with flour. Drop meatballs into your boiling broth and cover the pot. Turn the heat down to low and continue to cook the meatballs in the broth for 45 to 50 minutes. Be sure to stir frequently.

    After about 45 to 50 minutes add the potatoes to the broth and cover pot again. Cook for another 45 minutes to an hour or until potatoes are tender.

    Add additional seasoning to taste and any canned veggies now. Allow to cook just a few more minutes.

    Fill each bowl with a nice helping of your fave noodles and then ladle in the soup. Serve with a grilled tomatoe and cheese on focaccia bread and ohh so yummy!!
