A friend of mine at work made this for a pot luck last year and it was so good, I wanted to share it with everyone.

Ingredients

  • 2 pounds ground beef
  • 1 - onion, chopped
  • 15 oz cans tomato sauce
  • 2-16 oz cans spicy chili beans
  • 1-1/4 oz package taco seasoning mix
  • 16 oz packages frozen corn, thawed
  • 8 oz packages finely shredded cheddar jack cheese, divided
  • 9 oz packages nacho-flavored tortilla chips, crushed and divided
  • - optional: sour cream, chopped tomato, chopped green onion

How To Make nacho grande casserole

  • Step 1
    Brown ground beef and onion in a Dutch oven and drain. add tomato sauce, beans, seasoning mix and corn and stir until blended. Simmer over medium heat for 10 minutes.
  • Step 2
    Pour half of beef mixture into a greased 13" x 9" baking dish. Top with half each of the cheese and crushed chips; repeat layers.
  • Step 3
    Bake at 350 degrees for 25-30 minutes, until bubbly and golden.
  • Step 4
    Top portions with a dollop of sour cream and a sprinkling of tomato and green onions, if desired. Serve with avocados, warm tortilla, rice and/or beans.
