my mom's famous mini meatloaves

Growing up, this is the only recipe for meatloaf I had ever tried. Since then I have tried many other meatloaf recipes, and my Mom tried others as well, but she is always begged to go back to her original recipe. Everyone always requests that she make this for them, and kids LOVE them. It's a unique recipe that is so easy. Great weeknight meal idea. These also freeze really well, so you can make several batches ahead of time.

Ingredients

  • MEATLOAF MIXTURE
  • 2 - beaten eggs
  • 3/4 cup milk
  • 1/2 cup fresh white or wheat bread crumbs
  • 2 tablespoons dry parsley
  • 1 teaspoon table salt
  • 1/2 teaspoon ground sage
  • 1/8 teaspoon pepper
  • 1 1/2 pounds ground beef or ground turkey
  • SAUCE FOR TOPPING
  • 1/4 cup ketchup
  • 2 tablespoons dark brown sugar
  • 1 teaspoon yellow mustard

How To Make my mom's famous mini meatloaves

  • Step 1
    In Bowl, combine eggs and milk.
  • Step 2
    Stir in bread crumbs, onion, parsley, salt, sage and pepper; Add ground meat of choice, and mix well.
  • Step 3
    Place meat mixture into regular sized Muffin tins. It should make 18 individual meat loaves. I prefer using the disposable aluminum muffin tins. I poke holes in the bottom of the tins to let the excess fat drain while cooking, and place the tins on a broiler pan, or a cookie sheet topped with cake cooling racks just to keep the tins out of the fat.
  • Step 4
    Bake meat loaf, uncovered, in a 350 degree oven. For 20 minutes.
  • Step 5
    Stir together ketchup, mustard and brown sugar until well blended. Spread over meat loaves and return to oven; bake about 10 minutes more.
