My favorite kind of meatloaf. I made this once because I wanted to use up small amounts of sausage I had in the freezer and it turned out so well and is asked for so often that it became a regular dish at home. Everyone loves the crisp top and the bold flavors of the sausage. Really moist and great as a sandwich.

Ingredients

  • 1 pound ground beef, 85%/20%
  • 3/4 pound sweet italian sausage about 3 links
  • 1/4 pound hot italian saugage about 2 links
  • 1/2 - onion, chopped
  • 1 stalk celery, chopped
  • 1 small carrot, chopped
  • 1 teaspoon salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup bread crumbs or more if needed
  • 1 large egg
  • 2 tablespoons flour
  • 1 1/2 cups beef broth

How To Make my meatloaf

  • Step 1
    Remove sausage from casing and In a large bowl combine with beef
  • Step 2
    add the veggies, egg, breadcrumb and salt and pepper. If the meat is too wet add more breadcrumb but don't overdo as it makes the loaf hard.
  • Step 3
    turn out on to a board and shape into a loaf.
  • Step 4
    line a rimmed baking sheet with foil, oil slightly and place the loaf. Rub oil over the loaf.
  • Step 5
    Bake at 350 for about an hour, until top is crispy
  • Step 6
    Let loaf rest and remove some of the drippings, about 2 tablespoons. Place drippings in small saute pan with flour and toast a few minutes. Whisk in Beef broth to make a gravy.
