Ingredients
- FOR THE PRIME RIB
- 5 pounds prime rib roast
- 1 tablespoon white miso paste
- 1 1/2 tablespoons dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon each minced thyme and rosemary
- 4 cloves garlic minced
- 1 teaspoon fresh ground black pepper
- 2 teaspoons salt
- 1 ounce package dried shiitake mushrooms minced
- FOR THE AU JUS
- 1 cup dry red wine
- 2 cups beef broth
- 1 tablespoon worcestershire sauce
- salt and pepper to taste
How To Make mushroom crusted prime rib

Step 1Preheat oven to 450 degrees. Mix the mustard, miso, oil, thyme, rosemary, garlic, salt and pepper together. Rub all over the roast. Press the dried Shittake mushrooms onto the roast.

Step 2Place the roast on a rack in a roasting pan. Place a meat thermometer into the middle of the roast. Roast at 450 degrees for 15 minutes. Reduce the heat to 275 degrees and roast until internal temp reaches 125 degrees for medium rare. About 2 hours.

Step 3Remove the roast to a cutting board and tent with foil and let rest 20 minutes. Meanwhile make the Au Jus

Step 4Place the roaster pan over two burners on top of stove. Turn the heat to high and add the wine. Scrap up the bottom of the pan and bring to a boil. Pour in the beef broth and Worcestershire Sauce. Continue to boil about 5 minutes. Taste and add salt and pepper to taste. Strain in a fine mesh strainer or leave as is.
