Ingredients For mushroom crusted prime rib

  • FOR THE PRIME RIB
  • 5 lb
    prime rib roast
  • 1 Tbsp
    white miso paste
  • 1 1/2 Tbsp
    dijon mustard
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    each minced thyme and rosemary
  • 4 clove
    garlic minced
  • 1 tsp
    fresh ground black pepper
  • 2 tsp
    salt
  • 1 oz
    package dried shiitake mushrooms minced
  • FOR THE AU JUS
  • 1 c
    dry red wine
  • 2 c
    beef broth
  • 1 Tbsp
    worcestershire sauce
  • salt and pepper to taste

How To Make mushroom crusted prime rib

    Preheat oven to 450 degrees. Mix the mustard, miso, oil, thyme, rosemary, garlic, salt and pepper together. Rub all over the roast. Press the dried Shittake mushrooms onto the roast.

    Place the roast on a rack in a roasting pan. Place a meat thermometer into the middle of the roast. Roast at 450 degrees for 15 minutes. Reduce the heat to 275 degrees and roast until internal temp reaches 125 degrees for medium rare. About 2 hours.

    Remove the roast to a cutting board and tent with foil and let rest 20 minutes. Meanwhile make the Au Jus

    Place the roaster pan over two burners on top of stove. Turn the heat to high and add the wine. Scrap up the bottom of the pan and bring to a boil. Pour in the beef broth and Worcestershire Sauce. Continue to boil about 5 minutes. Taste and add salt and pepper to taste. Strain in a fine mesh strainer or leave as is.
