Ingredients

  • 2 pounds chuck roast, bite sized pieces
  • 3 tablespoons flour
  • 2 teaspoons salt
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon coriander
  • 1/4 teaspoon tumeric
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 2 - cloves minced fresh garlic
  • 2 cups juice/water
  • 1 cup carrots, diced
  • 20 ounces pineapple chunks
  • 3 small tomatoes, cut in wedges
  • - parsley flakes

How To Make moroccan beef stew

  • Step 1
    Dredge beef in flour and salt and brown in oil.
  • Step 2
    Pour off drippings.
  • Step 3
    Add spices, celery, onion and garlic.
  • Step 4
    Stir in juice and water.
  • Step 5
    Cook slowly 1 hour.
  • Step 6
    Add carrots and cook 30 minutes more.
  • Step 7
    Add pineapple and tomatoes and heat through.
  • Step 8
    Garnish with parsley.
