- 2 pounds chuck roast, bite sized pieces
- 3 tablespoons flour
- 2 teaspoons salt
- 2 tablespoons vegetable oil
- 1/4 teaspoon cumin
- 1/4 teaspoon ginger
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon coriander
- 1/4 teaspoon tumeric
- 1 cup chopped celery
- 1/2 cup chopped onion
- 2 - cloves minced fresh garlic
- 2 cups juice/water
- 1 cup carrots, diced
- 20 ounces pineapple chunks
- 3 small tomatoes, cut in wedges
- - parsley flakes
How To Make moroccan beef stew

Step 1Dredge beef in flour and salt and brown in oil.

Step 2Pour off drippings.

Step 3Add spices, celery, onion and garlic.

Step 4Stir in juice and water.

Step 5Cook slowly 1 hour.

Step 6Add carrots and cook 30 minutes more.

Step 7Add pineapple and tomatoes and heat through.

Step 8Garnish with parsley.
