mona's taco soup

My friend Mona gave my recipe from her Mom. Great on a cold winters day, but i make anytime of year. Everyone who has ever had it loves it! Hope you enjoy this as much as we do.

Ingredients
- 1 1/2-2lbs pounds ground beef, 80% works great, good flavor
- 1 medium onion chopped
- 1 can 28oz. whole tomatoes
- 1 can 16oz. kidney beans, or white or pinto
- 1 can 17oz corn with liquid
- 1 can 8oz. of tomato sauce
- 1 1/2-2 packages of taco seasoning mix(i only use taco bell)
- 2 cups water....may need more
- - salt & pepper to taste
- - chedder cheese or any cheese that melts fast, montrey jack is also good
- - tortilla chips
How To Make mona's taco soup

Step 1rinse beans in cold water, chop tomatoes into chunks, any size you like.

Step 2brown beef in a 6 or 8qt. pot with heavy bottom. Drain

Step 3add onion and cook until tender, about 10 mins., than add all the rest of the ingredients. simmer for about 20 min.

Step 4soup will be thick, for thinner soup add more water as needed. salt & pepper to taste. I find not much salt & pepper is needed because of the Taco seasoning.

Step 5I serve them in chili bowls, i break up some tortilla chips for the bottom of the bowls and add some cheese, than soup., of course more cheese for the top and tortilla chips stuck into the soup all around. you can also use a dollop of sour cream on top. Enjoy!
