Saw this one in the local paper and it looked too good to pass up. Real easy and one of best meat loaves I've ever prepared.

Ingredients

  • 2 slices whole wheat bread, toasted and cubed
  • 1/2 cup whole or 1/2 and 1/2 milk
  • 2 - eggs, gently beaten
  • 1 cup onion, chopped
  • 1/2 cup parmesan cheese
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon dijon mustard
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds lean ground beef
  • 1 cup ketchup

How To Make mom's original meat loaf

  • Step 1
    Pre-heat oven to 325 degrees
  • Step 2
    In large bowl, place bread crumbs, milk and eggs. Mix well. Add the onion, parmesan cheese, parsley, mustard, Worcestershire sauce, salt and pepper. Mix well.
  • Step 3
    Crumble ground beef on top of the mixture and fold together, using your hands.
  • Step 4
    Transfer to glass baking dish, sprayed with oil and form into a loaf. Spread ketchup over top of loaf. Bake 1 hour and 15 minutes.
