My husband craves this dish. Every time I make it, he tells me it's a mouthful of flavor. He loves it with the two different flavors of cheese. For the mashed potatoes, I like the garlic butter flavor mashed potatoes.

Get your kids to eat their dinner with this fun meatloaf cake. It looks beautiful when presented, and it is delicious. The meatloaf is jam-packed with flavor from chopped onions, bell peppers, and tomato. Meunster cheese is a hidden layer in the meatloaf. Once the icing, AKA mashed potatoes, is added, this is basically an all-in-one dish. Serve with a simple veggie for an easy weeknight dinner.

Ingredients
- 2 pounds ground beef
- 1 small onion, chopped
- 1 small green bell pepper, diced
- 1 medium tomato, diced
- 1 large egg
- 2 tablespoons garlic
- 1 cup bread crumbs, seasoned
- 5 slices Muenster cheese
- 1/4 cup cheddar cheese, shredded
- 1 package Idahoan mashed potatoes, plus package ingredients

This recipe was originally made in two loaf pans and stacked on top of each other. The flavors were amazing, but the layers would not stay. We adjusted the recipe to be baked in a 9x9 baking dish for easier presentation. All of the other instructions are the same.

Step 1Preheat the oven to 350 degrees F. Blend ground beef with onion, bell pepper, tomato, egg, garlic, and seasoned bread crumbs.

Step 2Divide in half.

Step 3Press one half into a 9x9 baking dish and spread half of the Muenster cheese on top of the meat.

Step 4Press the other half of the meat into the pan, covering the cheese. Bake uncovered in a preheated 350 degree oven for 1 hour.

Step 5When the meatloaf is almost done, make the instant potatoes.

Step 6Remove the meatloaf from the oven and top it with the rest of the Muenster cheese and sprinkle with 1/4 cup of the cheddar cheese.

Step 7Top the meatloaf with a thick layer of potatoes and sprinkle with 1/4 cup of cheddar cheese. Place back into the oven for about 10 minutes until the cheese is melted.
