I have been asked for this recipe several times. It always turns out great, and some people who really don't care for meatloaf have changed their mind after eating this meatloaf.

  • 1 c
    tomato juice
  • 3/4 c
    oats, quick cooking
  • 1
    egg or egg white
  • 1/4 c
    chopped onions
  • 1/2 tsp
  • 1/4 tsp
  • 1/1/2 lb
    lean ground beef

How to Make Mom's Meatloaf


  1. Heat oven to 350*
    For Piquant sauce topping: In a small bowl mix together 1/4 cup ketsup, 1/4 cup brown sugar,a pinch of nutmeg. set it aside.
  2. In a large bowl combine all the ingredients, except for the ground beef; mix well. Add the ground beef and mix lightly but be sure to mix meat in evenly.
  3. Press mixture into a 8x4 inch loaf pan.Top with Piquant sauce topping, then Bake 1 hour. Let stand 5 minutes before cutting.
