Everyone seems to love this recipe, even the picky eaters who used to swear they didn't like anyone's meatloaf!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 1 - egg
  • 8 ounces tomato sauce, divided
  • 1 1/2 cups quick oats
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper,
  • 1 tablespoon rubbed sage
  • 1 medium carrot, finely shredded (optional)
  • 1/2 medium green pepper, finely minced (optional)

How To Make mom's meatloaf

  • Step 1
    Pre heat oven to 350
  • Step 2
    In casserole dish or large loan pan,thoroughly mix together ground beef, onions, carrots, green pepper, salt, pepper, sage, egg, oats, and 1/2 the tomato sauce. if mixture seems too dry, ketchup or additional tomato sauce may be added.
  • Step 3
    Top with remaining tomato sauce. Bake in preheated oven for 50-60 mins until center is no longer pink. Carrot and green peppers may be omitted, still gets a lot of compliments even without the added veggies.
