mom's best meatloaf ever
My Mom made the best meatloaf I've ever had. Being a momma's girl I watched and learned. Now I am sharing. My oldest stepdaughter used to say, I don't like meatloaf but if I had to eat it I would eat yours. Now she loves it and asks for seconds. My five year old makes yummy noises and so will you!!!

Ingredients
- 3 lbs packages ground meat of choice, i use hamburger
- 1 large green bell pepper
- 1 medium red onion
- 2 large eggs
- 3 packages french onion soup mix
- 1 cup ketchup
How To Make mom's best meatloaf ever

Step 1Preheat oven to 425 and set out ground meat for about 10 minutes, enough to take the chill off.

Step 2Chop bell pepper and onion into cubes.

Step 3Mix all ingredients together with hands, form into desired shape (ex. oval) and place on an oven safe dish. Cover with ketchup. I use a broiling pan so the oil drips into the bottom pan. I have used a large baking dish and placed bread slices under the meatloaf so it soaks up the grease while cooking. I prefer the broiling pan.

Step 4**I use 1 pack soup mix per pound of meat. I have also used the beef onion soup mix. Bake for about one hour for 2-3 lbs, less if only making 1lb.

Step 5Let cool and plate. I usually serve with mashed potatoes, stir fry broccoli with garlic or green beans, corn and yeast rolls.
