mom's meatball and rice dinner

This is a casserole my mom made when we were growing up. I don't have any idea where she got the recipe, I just know it was the one thing I would always ask her to make for me. I still make it but as empty nesters I cut the recipe in half. The onions give it a unique flavor. It is so easy to make and just a few ingredients are needed. Hope you will try it and enjoy.

Ingredients
- 1 cup rice, reglar uncooked
- 5 cups tomato juice
- 1 cup water
- 2 tablespoons ketchup
- 1 tablespoon salt
- 1/2 teaspoon pepper
- 6 small onions, peeled and cut in quarters
- 2 1/2 pounds ground beef, very lean
How To Make mom's meatball and rice dinner

Step 1Pre-heat oven to 350 degrees. Spray or grease a large deep baking dish.

Step 2Combine tomato juice, water, ketchup, salt, and pepper. Stir gently just to combine the ingredients. Pour into the prepared dish.

Step 3Make the ground beef into meatballs the size of a walnut. Add the uncooked meatballs, onions and uncooked rice to the tomato juice mixture in the baking dish. Cover with foil and bake 2 to 2-1/2 hours or until rice is tender at 350 degrees. Gently stir once or twice during baking, being careful not to break up the meatballs.
