Ingredients

  • 1 pound ground beef
  • 1 pound bulk sausage, mild or hot, no casings
  • 2 sleeves - ritz crackers or 2 cups bread crumbs
  • 1 - onion, quartered
  • 1 - red pepper, quartered
  • 1 - yellow pepper, quartered
  • 2 cloves garlic, whole
  • 1 - 6 oz. - tomato paste
  • 1/2 cup beef broth
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt & pepper
  • 3 - eggs
  • 12 slices bacon, divided
  • 1 recipe - *** mom's sauce for meatloaf *** (optional) (see below)

How To Make *** mom's fast & easy meatloaf ***

  • Step 1
    Preheat oven to 325 degrees F.
  • Step 2
    In medium bowl, combine beef, sausage, eggs & crackers; mix well. Set aside.
  • Step 3
    Pulse onion, bell peppers & garlic until chunky, about 20 times. Transfer to meat bowl.
  • Step 4
    In another large bowl, add tomato paste, broth, onion powder, paprika, salt & pepper; mix well. Add meat/pepper mixture; mix well.
  • Step 5
    Divide meat evenly into two loaf pans. Place slices of bacon over (see pictures of placement).
  • Step 6
    Bake at 325 degrees F. for 30 minutes, then raise to 375 degrees F. until firm, about 45 minutes. (IF USING SAUCE - POUR IT OVER THE MEATLOAF FOR THE LAST 10 MINUTES OF COOKING). Rest 20 minutes. Slice.
