Ingredients
- 1 pound ground beef
- 1 pound bulk sausage, mild or hot, no casings
- 2 sleeves - ritz crackers or 2 cups bread crumbs
- 1 - onion, quartered
- 1 - red pepper, quartered
- 1 - yellow pepper, quartered
- 2 cloves garlic, whole
- 1 - 6 oz. - tomato paste
- 1/2 cup beef broth
- 1 1/2 teaspoons onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt & pepper
- 3 - eggs
- 12 slices bacon, divided
- 1 recipe - *** mom's sauce for meatloaf *** (optional) (see below)
How To Make *** mom's fast & easy meatloaf ***

Step 1Preheat oven to 325 degrees F.

Step 2In medium bowl, combine beef, sausage, eggs & crackers; mix well. Set aside.

Step 3Pulse onion, bell peppers & garlic until chunky, about 20 times. Transfer to meat bowl.

Step 4In another large bowl, add tomato paste, broth, onion powder, paprika, salt & pepper; mix well. Add meat/pepper mixture; mix well.

Step 5Divide meat evenly into two loaf pans. Place slices of bacon over (see pictures of placement).

Step 6Bake at 325 degrees F. for 30 minutes, then raise to 375 degrees F. until firm, about 45 minutes. (IF USING SAUCE - POUR IT OVER THE MEATLOAF FOR THE LAST 10 MINUTES OF COOKING). Rest 20 minutes. Slice.
