Ingredients For *** mom's fast & easy meatloaf ***

1 lbground beef
-
1 lbbulk sausage, mild or hot, no casings

2 sleevesritz crackers or 2 cups bread crumbs

1onion, quartered
-
1red pepper, quartered
-
1yellow pepper, quartered
-
2 clovegarlic, whole
-
1 - 6 oz.tomato paste
-
1/2 cbeef broth
-
1 1/2 tsponion powder
-
1 tsppaprika
-
1/2 tspsalt & pepper
-
3eggs
-
12 slicebacon, divided
-
1 recipe*** mom's sauce for meatloaf *** (optional) (see below)
How To Make *** mom's fast & easy meatloaf ***

1Preheat oven to 325 degrees F.

2In medium bowl, combine beef, sausage, eggs & crackers; mix well. Set aside.

3Pulse onion, bell peppers & garlic until chunky, about 20 times. Transfer to meat bowl.

4In another large bowl, add tomato paste, broth, onion powder, paprika, salt & pepper; mix well. Add meat/pepper mixture; mix well.

5Divide meat evenly into two loaf pans. Place slices of bacon over (see pictures of placement).

6Bake at 325 degrees F. for 30 minutes, then raise to 375 degrees F. until firm, about 45 minutes. (IF USING SAUCE - POUR IT OVER THE MEATLOAF FOR THE LAST 10 MINUTES OF COOKING). Rest 20 minutes. Slice.
