mom's cheese meatballs
Mom was not a fancy cook- but always made a great meal out of things on hand. If it was something that was leftover and needed to be eaten up- you wouldn't know it was in your next meal- made into something real delicious! I think most mom's during the depression did this: and later on the recipes were liked and she kept on making something out of nothing, and it was always delicious- from soups to desserts and everything in between.

Ingredients
- MEATBALLS:
- 2 pounds ground beef
- 1/4 cup milk
- 3/4 cup soft breadcrumbs
- 1/4 cup parsley flakes
- 2 large eggs
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 small piece of cheese, i like swiss mom used what was handy, cut in small pieces
- 3 tablespoons bacon grease
- CREAM SAUCE:
- 4 tablespoons margarine or butter
- 1 small onion, diced
- 2 cloves garlic, finely chopped
- 2 cans 10.5 oz. ea. beef broth
- 1/4 cup all purpose flour
- 2 tablespoons worcestershire sauce
- 1 cup dairy sour cream, or creamy cottage cheese,blended smooth
How To Make mom's cheese meatballs

Step 1Heat oven to 350^. Grease a small roaster or 9x13-inch baking pan. --- Meatballs: In a bowl, place all the ingredients, except the cheese. Mix well to combine. Cut the cheese into small pieces. Set aside.

Step 2Shape and form the meat mixture around the pieces of cheese, to form a ball, enclosing the cheese well. Heat the bacon grease in a large cast iron pan over medium heat. When skillet is hot cook meatballs until browned on all sides.Place in prepared pan and Bake for 15 minutes,uncovered.

Step 3Sauce: In the same skillet remove most of the grease, and add the margarine,and onion and sautée for 4 minutes, add the garlic and cook 1 more minute. Now add the flour and stir until a smooth paste forms, about 2 minutes. Add the beef broth , slowly so no lumps form. Cook until sauce is thick. Add the Worcestershire and sour cream.Stir to blend. Remove from heat. Pour mixture over meatballs and serve over cooked noodles or rice.
