mini jalapeño meatloaves
I love meatloaf...the food - not to be confused with the American rock musician and actor. I had to guess at the ingredients. I usually don't measure unless I'm following someone else's recipes. It's hard to go wrong with this though. If you really want to make it spicy. Use a can of diced tomatoes with chiles. *sizzle! Shown in pic with Parmesan garlic mashed potatoes, tomato medley and mozzarella salad with spices and balsamic vinegar.

Ingredients
- 2 teaspoons olive oil
- 2-3 tablespoons crushed garlic (optional)
- 1/2 cup diced onion
- 1 pound ground turkey
- 1 pound lean ground beef
- 1 large egg
- 1/4 cup chopped parsley
- 1/2 cup dried bread crumbs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon dried italian spices
- 1-2 - diced jalapeño (seeded or use jar jalapeños)
- 3 tablespoons ketchup
- 1/4 teaspoon tapatio hot sauce
How To Make mini jalapeño meatloaves

Step 1Heat oil over medium-high heat. Add garlic and onion; sauté 5 minutes or until lightly browned. Remove from heat; cool slightly.

Step 2In a large bowl; combine the next nine ingredients. combine the onion - garlic mixture and two tablespoons of ketchup.

Step 3Fill muffin tin with mixture. (you may want to coat the muffin tin with cooking sprayer prior to filling)Place on a cookie sheet to prevent spillage.

Step 4Combine remaining 1 tablespoon ketchup and hot pepper sauce in a small bowl. (I don't measure, so this is just a guideline) Brush ketchup mixture over meat loaf tops.

Step 5Bake at 350° for 30 minutes or until a thermometer registers 165°.
