Sometimes our meals are purely nothing but comfort foods. I saw a similar recipe and decided to try a few things different and served these mini meatloaves with a side dish of mashed potatoes!

Ingredients For mini cheese-stuffed meatloaves

  • 12
    cupcake liners
  • 1 lg
    egg, beaten
  • 1/2 c
    milk
  • 1/4 c
    steak sauce
  • 1/2 c
    quick cooking oats
  • 1/2 tsp
    salt
  • 1 lb
    lean ground beef
  • 12
    cubes mild cheddar cheese
  • 1/4 c
    light brown sugar
  • 2/3 c
    ketchup

How To Make mini cheese-stuffed meatloaves

    Preheat oven to 375 degrees F. Line 12 count muffin tin with cupcake liners. In a large bowl, combine the beaten egg, milk, steak sauce, uncooked quick cooking oats, beef and salt.

    Divide mixture into twelve equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat around the cheese into a ball. Place into muffin tin and continue with remaining meat and cheese.

    In a separate small bowl, combine the ketchup and brown sugar. Stir thoroughly and spread over each mini meatloaf.

    Bake uncovered on center oven rack for 25 minutes.
