This recipe caught my attention because it had cocoa and cinnamon as ingredients. This has turned out to be a family favorite. Definitely not your everyday meatloaf.

Ingredients
- 1 1/2 pounds meatloaf meat mix(beef, pork and veal) or just all ground beef
- 1/4 cup plain breadcrumbs, dried
- 1 large egg, well beaten
- 1 cup salsa, we use hot picante brand
- 4 1/2 ounces chopped green chiles
- 2 tablespoons brown sugar, packed
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped parsley, or additional cilantro
- 1 teaspoon cocoa powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon chili powder
- 1 teaspoon lemon juice
How To Make mimi's mexican meatloaf

Step 1Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.

Step 2In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.

Step 3Bake at 350 for 50 minutes. Remove from oven and spoon remaining sauce over top of meatloaf. Return to oven and bake an additional 20-30 minutes or until thoroughly cooked and center reads 160 degrees on an instant-read thermometer.
