mimi's mexican casserole
This is a very easy to prepare and inexpensive weeknight dinner. The tortillas on the bottom layer get good and crunchy. I don't know how it is for leftovers because I haven't had any! Use lettuce, tomato, grated cheese and sour cream for garnishing and you have a complete meal in no time.

Ingredients
- 1 or 1-1/2 pounds ground beef
- 1 package taco seasoning mix
- 3/4 cup water
- 1 can refried beans
- 1/2 cup salsa
- 6 - flour tortillas
- 2 cups frozen corn kernels
- 2 cups cheddar cheese, grated
- OPTIONAL GARNISHES
- - lettuce, tomatoes, onion, black olives, salsa, sour cream and additional grated cheddar

Step 1Heat oven to 350. Grease a 2-1/2 quart ovenproof dish. In a large skillet cook the ground beef until no longer pink. Drain fat. Add taco seasoning packet and water and simmer for 5 minutes. (I had a little left over chopped onion and tomato and I added it to the meat this time.)

Step 2Meanwhile, in microwave-safe bowl put beans and salsa. Heat in microwave for about 30 seconds or until easy to combine and it is spreadable.

Step 3In prepared casserole dish place 3 flour tortillas. Layer with 1/2 beef, bean mixture, corn kernels and cheese. Place 3 more tortillas. Repeat layers.

Step 4Bake in oven for 40-45 minutes or until cheese is melted. Remove from oven and let sit for 5 minutes before serving with optional garnishes as desired.
