Well, I couldn't share my Vegie Soup recipe without sharing my meatloaf recipe.. My family loves meatloaf, the boys request it for their birthday dinners, along with mashed potatoes and meatloaf gravy! Another family fav.

Ingredients For mimi's meatloaf

  • 1 1/2 lb
    lean ground beef
  • 3/4 lb
    lean ground pork
  • 1 md
    onion finely chopped
  • 2 clove
    fresh garlic finely chopped
  • 2 lg
    eggs
  • 1/2 c
    oatmeal, uncooked (quick kind)
  • 1 lg
    plop of sour creme
  • 1 pinch
    salt and pepper
  • dash
    worcestershire sauce
  • dash
    ketchup
  • dash
    olive oil, extra virgin
  • water if needed

How To Make mimi's meatloaf

    In a large bowl mix all the ingredients together. The seasonings, worcestershire sauce, ketchup would be to your taste. I rarely measure, just shake and squirt! The amount of water would depend on how lean your meat is, you don't want the mix to be too dry.

    Grease a loaf pan and put your mixed meatloaf into it, mounding it up from the sides of the pan (a wooden spoon works well for this) Squirt and spread ketchup on top. Place in a 350 degree oven for 1 hour.

    This recipe is basic. I have been know to add leftover steamed vegies, or cooked rice, tomato sauce instead of ketchup, it just depends on what I have on-hand. So mix it up, it's all good!
