mimi's cabbage and corned beef

Ingredients
- 2 tablespoons bacon fat
- 1/2 cup chopped celery, bellpepper, onion
- 2 cloves minced garlic
- 1 large cabbage, chopped
- 1 bunch green onions, chopped
- 1 bag fresh baby spinach
- 1 can corned beef
- 1 teaspoon black pepper
- salt to taste
How To Make mimi's cabbage and corned beef

Step 1Saute the onion, celery, bell pepper and garlic in the bacon fat for two minutes. Add the cabbage and saute two more minutes. Then add the spinach and green onions, put a lid and let steam/simmer on medium for about 3 minutes.

Step 2Remove the lid and break up the corned beef into the pan. Return the lid and steam/simmer while making a pan of cornbread. Add the black pepper and salt to taste. Careful, will not need much salt since the corned beef is salted. Do NOT be tempted to add any liquid the greens make plenty of tasty 'pot liquor' for the recipe!

Step 3While the cornbread is cooking, open the lid and toss gently to even the cooking. Serve hot in a bowl with the cornbread slice in the bowl. It will help soak up the 'pot liquor' full of flavor!
