microwave lasagna

I think that microwaves first came out in the late 70's or early 80's. I was one of the lucky ones to get one back then. This was my favorite recipe from my cookbook that came with my new microwave. My family loved it and I've tweaked it thru out the years. Most of the tweaks are simple but include changing the original recipe by using cottage cheese for 1/2 of the ricotta which made it a little creamier, Italian seasoning which replaced all of the individual spices and adjusting the cooking times based on newer stronger microwaves. Ingredients

  • 1 pound ground beef
  • 1 clove garlic, minced
  • 1 cup water
  • 6 ounces tomato paste
  • 14 ounces tomato sauce
  • 1 1/2 teaspoons italian seasing
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1/2 pound ricotta cheese, part skim (you can use all ricotta and skip the cottage cheese if desired)
  • 1/2 pound cottage cheese
  • 1/2 cup parmesan cheese, grated
  • 1 egg, beaten
  • 2 tablespoons parsley, chopped
  • 1/2 pound lasagna noodles, cooked
  • 1/2 pound mozzarella cheese, shredded
  • parmesan cheese, grated

How To Make microwave lasagna

  • Step 1
    Place beef and garlic in 2 quart casserole.
  • Step 2
    Cook, covered on full power 4 to 5 1/2 minutes. Stir 1/2 way through time. Drain.
  • Step 3
    Add next 8 ingredients. Cook covered full power 6 to 8 minutes until boiling. Stir 1/2 way.
  • Step 4
    Blend ricotta and cottage cheese (if using), 1/2 cup Parmesan, egg, and parsley in small bowl.
  • Step 5
    Layer 1/2 of noodles in 2 quart dish. Spread 1/2 of cheese mixture, 1/2 mozzarella, and 1/2 meat sauce.
  • Step 6
    Repeat layers.
  • Step 7
    Cover loosely with saran wrap.
  • Step 8
    Heat full power 13 to 16 minutes.
  • Step 9
    Sprinkle top generously with Parmesan.
  • Step 10
    NOTE: This freezes well. I usually double the recipe and freeze some.
