Add this Mexican taco meatloaf to your weekly meal plan and your family will look forward to meatloaf night. It's a seriously delicious meatloaf. Thanks to sour cream and salsa, the meatloaf is very moist. Filled with taco flavor, cheese Doritos add an extra zip to the meatloaf. Salsa and melted cheese on top are the perfect final touch. Serve with mashed potatoes, Spanish rice, or Mexican corn for a tasty meal.

Ingredients
- 1 large egg
- 1/4 cup sour cream
- 3/4 cup salsa, divided
- 2 tablespoons taco seasoning
- 1/4 cup diced onion
- 3/4 cup shredded cheddar cheese, divided
- 1 pound ground beef
- 1/2 - 1 cups crushed Doritos, flavor of your choice
- OPTIONAL GARNISH
- - lettuce
- tomatoes
- onions
- black olives
- salsa
- sour cream
How To Make mexican taco meatloaf

Step 1Preheat the oven to 350 degrees F. In a mixing bowl, whisk egg, 1/4 cup sour cream, 1/4 cup salsa, 2 Tbsp taco seasoning, 1/4 cup diced onions, and 1/4 cup shredded cheese.

Step 2Add the ground beef and mix well.

Step 3Add the crushed Doritos and gently incorporate.

Step 4Place the meatloaf mixture in a baking dish and form a loaf.

Step 5Bake at 350 degrees for 50 minutes.

Step 6Remove from the oven and top with remaining 1/2 cup salsa and 1/2 cup cheese. Return to the oven for 10 - 15 minutes. Optional - serve with lettuce, tomatoes, onions, black olives, salsa, and sour cream if desired.
