Ingredients
- 1 pound lean beef round steak, trimmed, cubed
- 1 tablespoon vinegar
- 1 - onion, thinly sliced
- 2 cups crushed tomatoes, undrained
- 1 cup water
- 1 - fresh hot jalapeno pepper, or canned, diced
- 1 - garlic clove, minced
- 1 teaspoon cumin seeds or 1/2 teaspoon ground cumin
- 1/4 teaspoon ground oregano

Step 1Spray a non-stick pan with cooking spray.

Step 2Brown the beef cubes over moderate heat.

Step 3Turn to brown evenly.

Step 4Drain and discard any melted fat.

Step 5Stir in vinegar and onion.

Step 6Cook and stir just until onion begins to brown.

Step 7Stir in remaining ingredients.

Step 8Lower heat to simmering.

Step 9Cover and simmer 1 1/2 to 2 hours until meat is very tender.

Step 10Uncover and simmer until sauce is thick.

Step 11Skim fat, if any.

Step 12If desired, serve with rice.
