Made this often when my kids were little and have shared it with friends and even the pickiest of eaters has always loved it. I hope anyone who tries it enjoys!

Ingredients

  • 1 pound ground meat
  • 1 can ranch style beans
  • 1 can whole kernel corn
  • 1 can rotel tomatoes
  • 1 1/2 cups instant rice (uncooked)
  • 1 cup water
  • 1 cup cheddar cheese, shredded
  • 1 package taco seasoning mix

How To Make mexican skillet casserole

  • Step 1
    In skillet brown ground beef with taco seasoning and drain fat.
  • Step 2
    Pour instant rice in the skillet and stir to mix with the meat.
  • Step 3
    Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
  • Step 4
    Remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
