Made this often when my kids were little and have shared it with friends and even the pickiest of eaters has always loved it. I hope anyone who tries it enjoys!

whole kernel corn

rotel tomatoes
1 1/2 c
instant rice (uncooked)
1 c
1 c
cheddar cheese, shredded
1 pkg
taco seasoning mix

How to Make Mexican Skillet Casserole


  • 1In skillet brown ground beef with taco seasoning and drain fat.
  • 2Pour instant rice in the skillet and stir to mix with the meat.
  • 3Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
  • 4Remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
