mexican shepherd's pie
There are days you're just bored with the same old same old! I figured a twist on the old standby of Shephard's Pie would be to give it a "south of the border" flair... so gave this a try. Made a hit and tasted great! For those who like the heat, add some green chilis or hot sauce to kick it up a notch.

How To Make mexican shepherd's pie
-
Step 1Brown hamburger with onions in skillet. Add seasoning, diced tomatoes and black beans. Heat through and pour into a 13x9" pan. (You can add hot sauce to make this more spicy. I like it mild!)
-
Step 2Spread one cup of the cheese on top of the hamburger mixture.
-
Step 3In a separate bowl, mix the corn bread, eggs, and milk. Spoon on top of the hamburg mixture. Then sprinkle the remaining cheese on top of the corn bread.
-
Step 4Bake in 350 degree oven for 30 minutes. Let sit 5 minutes before serving!
