Ingredients

  • 4 cups corn meal
  • 2 cans swanson chicken broth
  • 1 pound ground beef,turkey,chicken or pork.
  • 1 jar salsa,the chunkier the better.
  • 16 ounces sour cream
  • 1 pound shredded cheddar or 3-cheese mexi-blend
  • 1 package taco seasoning mix
  • - hot sauce (optional)

How To Make mexican polenta

  • Step 1
    In a saucepan, bring chicken broth to a boil. Add corn meal. Boil rapidly for 3 min. turn down heat,simmer for 15 min.
  • Step 2
    Brown ground beef in a pan. When brown add taco seasoning mix. Add jar of salsa. Stir.
  • Step 3
    When corn meal is thick enough to your liking spoon into bowl. Add some of the meat mixture on top. Sprinkle shredded cheese(generously). Top off with a spoonful of sour cream. Hot sauce to taste.
