MEATBALLS

1/2 lb
ground beef
1/2 lb
raw chorizo casing removed
1 large
egg
4 clove
garlic
1/2 large
carrot
1/2 c
cooked rice
1/2 c
fresh cilantro chopped
1 tsp
each salt and cumin
1/2 tsp
black pepper

SOUP

6 c
chicken broth
1/2 c
onion chopped
15 oz
can diced tomatoes with juice
1/2 tsp
cumin
1 tsp
mexican oregan
1/2 c
cilantro chopped
salt and pepper to taste

How to Make Mexican Meatball Soup

Step-by-Step

  • 1Mix all the ingredients together for meatballs. Shape into 24 meatballs and set aside.
  • 2Place chicken broth, onion, tomato with liquid, cumin, oregano, and cilantro in large pot. Bring to a boil and reduce to a low boil and cook 10 minutes.
    Drop the meatballs in the boiling soup and continue to cook another 10 minutes.
  • 3Taste and season with salt and pepper.
