Ingredients

  • MEATBALLS
  • 1/2 pound ground beef
  • 1/2 pound raw chorizo casing removed
  • 1 large egg
  • 4 cloves garlic
  • 1/2 large carrot
  • 1/2 cup cooked rice
  • 1/2 cup fresh cilantro chopped
  • 1 teaspoon each salt and cumin
  • 1/2 teaspoon black pepper
  • SOUP
  • 6 cups chicken broth
  • 1/2 cup onion chopped
  • 15 ounces can diced tomatoes with juice
  • 1/2 teaspoon cumin
  • 1 teaspoon mexican oregan
  • 1/2 cup cilantro chopped
  • - salt and pepper to taste

How To Make mexican meatball soup

  • Step 1
    Mix all the ingredients together for meatballs. Shape into 24 meatballs and set aside.
  • Step 2
    Place chicken broth, onion, tomato with liquid, cumin, oregano, and cilantro in large pot. Bring to a boil and reduce to a low boil and cook 10 minutes. Drop the meatballs in the boiling soup and continue to cook another 10 minutes.
  • Step 3
    Taste and season with salt and pepper.
