Ingredients
- MEATBALLS
- 1/2 pound ground beef
- 1/2 pound raw chorizo casing removed
- 1 large egg
- 4 cloves garlic
- 1/2 large carrot
- 1/2 cup cooked rice
- 1/2 cup fresh cilantro chopped
- 1 teaspoon each salt and cumin
- 1/2 teaspoon black pepper
- SOUP
- 6 cups chicken broth
- 1/2 cup onion chopped
- 15 ounces can diced tomatoes with juice
- 1/2 teaspoon cumin
- 1 teaspoon mexican oregan
- 1/2 cup cilantro chopped
- - salt and pepper to taste
How To Make mexican meatball soup

Step 1Mix all the ingredients together for meatballs. Shape into 24 meatballs and set aside.

Step 2Place chicken broth, onion, tomato with liquid, cumin, oregano, and cilantro in large pot. Bring to a boil and reduce to a low boil and cook 10 minutes. Drop the meatballs in the boiling soup and continue to cook another 10 minutes.

Step 3Taste and season with salt and pepper.
