The best part is the leftovers for a meatloaf sandwich the next day with a slice of american cheese.

1 cup crushed saltines (about 30 crackers)
1 envelope taco seasoning mix
1/2 cup ketchup
4 oz. can green chilies
1/2 cup pepper jack cheese, grated
1 small onion, chopped
2 eggs, beaten
2 tablespoons worchestershire sauce
2 lbs. ground chuck

How to Make Mexican Meat Loaf


  • 1In a bowl, combine the first 8 ingredients. Add beef; mix well. Press into a greased 9x5 inch loaf pan. Bake @ 350 for 1-1 1/2 hours or until done.
  • 2Serve with salsa, sour cream and shredded cheese of choice.
