This one I got from another Weight Watcher and I love it. My kids ask for it all the time. Easy and yummy too!

Ingredients

  • 1 pound lean ground beef or turkey
  • 1 can 16oz fat free refried beans
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 2 cups water
  • 2 cups reduced fat sour cream
  • 1 can 2 1/4 sliced olives - drained
  • 1 cup shredded reduce fat cheese
  • 1/4 cup thinly sliced green onions
  • 16 ounces jar of salsa
  • 3/4 teaspoon garlic powder
  • 9 - uncooked lasagne noodles

How To Make mexican lasagna

  • Step 1
    In a non-stick skillet, cook beef and drain. Add spices and beans. Heat through completely. Coat a baking dish with cooking spray ( 9x13 ) Place 3 noodles in dish and cover with 1/2 the meat and bean mixture. Repeat layers. Top with noodles.
  • Step 2
    Combine salsa and water mix together. Pour this mixture over the noodles. Cover and Bake 350 degrees for 60 - 70 minutes or until noodles are tender. Spread with sour cream. Sprinkle with olives, cheese and green onions. Cool slighly before serving.

    341 cal. 13 grams of fat and 4 fiber. 7 points per serving. Enjoy
